OPTI GEL P80 High Gel Whey Protein Concentrate designed to build texture in food.
Usage
Ideal as a functional ingredient adding viscosity and texture to food applications especially in dairy applications. OPTI GEL P80 also provides emulsification to a variety of meat, bakery and convenience foods.
Sensory characteristic
Colour: Creamy white to yellow, uniform.
Smell: Specific – proteinaceouse, free from foreign odours.
Taste: Typical for the product, clean, free from foreign taste.
Appearance: Free flowing powder, homogeneous, finely atomised, acceptable light lumps easily crumbling.
